)Garlic Baked Butternut Squash:
-2 Tbsp. minced fresh parsley (dried works fine too)
-2 Tbsp. olive oil
-2 garlic cloves (or 1/8 tsp. garlic powder)
-1 tsp. salt
-1/2 tsp. pepper
-3 1/2 lbs. butternut squash, peeled, and cut into 1″ cubes (Costco has a container pre-cubed and pre-peeled— much easier!)
-1/3 cup Parmesan cheese (can leave off)
Combine parsley, oil, garlic, salt, and 
pepper.  Add squash and toss to coat.  Transfer to shallow 2-qt. baking 
dish.  Sprinkle on Parmesan cheese if desired
Bake at 400 for 50-55 minutes
